mike and i are hosting thanksgiving at our house this year and i am totally making mini pies so that everyone will get the pie favor they like and i’m not stuck with crazy amounts of leftover pie.
*by ‘genius’ i mean ‘person who can find things on pinterest’
well, it feels like fall, except that all our windows are open! it was sunny and 80 degrees today- just perfect!! mike has to work tomorrow and so does a lot of the studio (i don’t though-yay!) so i made these petite pumpkin spice donuts for him to bring into work…

except i don’t know how to make donuts, so i made pumpkin spice mini muffins. they are delicious! the recipe was super easy too. i found the recipe on pinterest, which i am slowly getting more and more addicted to each day. if you need an invite let me know. otherwise you can find this recipe and other awesome stuff on my pinterest boards.

homemade marshmallows are AMAZING!
here at the garcia household we have cravings and we have them hard. and nine times out of ten we give in to them. case in point the little caesar’s pizzas we had for lunch and more recently the batch of blueberry muffins i just baked. i bought a blueberry muffin from 7-11 for breakfast one day last week and it was horrible (what was i really expecting?). i hate it when the hard, sad excuses for blueberries are all on the top of the muffin so you get like three (tops) good (that’s generous) bites. and then the rest of the blueberry-less muffin is so disgustingly sweet you can’t even finish it without going into a diabetic coma. the muffins i made are light and lemony and i may have added extra blueberries just cause. they are seriously delicious and the recipe is easy (and here)!


i made the most delicious chicken nachos tonite. also we made pulled pork sandwiches because that’s what the nfl cookbook told us to made.
i finally got my car back from the shop! yes, it’s been the shop since i got in that accident almost over three months ago!!!
finally made pumpkin whoopie pies with cream cheese filling for the baby shower at work and they were seriously amazing! if you’re not into the whole book thing the recipe is here.
in an effort to eat breakfast everyday this week i made my mom’s banana bread recipe and turned it into banana bread muffins with chocolate chips. delicious and healthy homemade.
i’ve made it so many times i can actually remember the recipe off the top of my head:
half cup butter and one cup sugar creamed together
add two eggs and blend
sift two cups flour, half teaspoon salt and one teaspoon baking soda
mash one cup ripe bananas (two good size bananas)
add dry mix and bananas to wet mix and blend
bake at 350 degrees in load pan for like 55 mins (or add chocolate chips and make 18 muffins and bake for like 20 mins)
let cool and nom nom nom
another surprise from my baby! it seems he’s getting a little carried away with his amazon credit card and my cooking. i’m ok with it though seeing how most of winter we’ll be stuck in the house anyways. so far i have only made the lemon lemon loaf and it was preeeeeetty, pretty good. next up pumpkin whoopie pies with cream cheese filling. see below:

look what my baby bought himself me! i kinda hate football season, but i made it thru the last one fine. ok well fine-ish. the superbowl was def my breaking point, but hey! that’s right at the end! i consider that making it thru.
this year we have a house, a 60 inch tv and the nfl ticket. and now an awesome manly cookbook. i can’t wait!

mike and i had another pizza tonite, just the two of us. instead of using the leftover dough for breadsticks i went a little wild and made pizza cupcakes. and they actually turned out great. i made a cupcake version of my pizza- goat cheese, spinach and tomato:

and some like mike’s pizza- mozzarella, sausage and green pepper:

apparently, if it could possibly be a cupcake, i will make it a cupcake.
